Easy Chicken Quesadilla Recipe

Don't know what to have for lunch? This easy chicken quesadilla recipe will have you out of the kitchen in no time and satisfied until dinner!

Ingredients:


  • Pico de gallo

  • Spinach

  • Shredded cheese (Colby Jack blend or 4 cheese)

  • Diced or Shredded chicken (Perfect use of leftovers)

  • Spinach or White Flour Tortillas

  • Onion Powder

  • Chilli Powder

  • Garlic Salt

  • Paprika

To Garnish:

  • Guacamole

  • Sour Cream

  • Salsa


Sometimes, I'll make my own guacamole, pico, or chicken however since I want a shorter prep time, I'll typically buy these from the grocery store premade. I'll get a rotisserie chicken from the supermarket and shredded up the chicken or use chicken from any leftover meal prep. I'll buy my pico de gallo and guacamole premade as well and available for use in my fridge.


Serves 2 people

Prep Time: 10 minutes

Cook Time: 10 minutes




Directions:


  1. In large skillet heat olive oil on medium heat. Pour pico de gallo mix in the pan and drizzle over with paprika and stir. When finished, set aside for later

  2. On a plate, place bottom tortilla and then layer with ingredients in the following order: spinach-shredded chicken-shredded cheese- pico de gallo-maybe more cheese :) Before placing the top tortilla, drizzle garlic salt, onion powder, and chilli powder for maximum flavour. YUM! :)



3. Place tortilla gently in a heated large skillet. Keep flame on medium-low until cheese is melted. Flip and brown to discretion.

4. Plate, slice and garnish your quesadilla with guacamole, sour cream, and salsa. Voila! Lunchtime in no time!
